About Piece

Bill Jacobs, a New Haven native, brought one of his greatest passions—New Haven-style pizza—to Chicago when he opened Piece in July 2001. After moving to Chicago in 1983, Bill struggled to find a thin-crust pizza that matched the deliciously crispy yet chewy pies of his youth. Determined to recreate that flavor, he teamed up with his high school friend, Ray Peck, who was working at the renowned Sally’s Apizza on Wooster Street in New Haven. Together, they opened Piece, offering authentic New Haven-style pizza paired with a brewery.

History 

Piece has been serving award-winning handcrafted lagers and ales produced in small batches in our seven-barrel brewhouse. In 2006 Piece won Champion Small Brewpub at the World Beer Cup. Most recently, our former assistant brewer has returned to man the helm. Keil Weimer, who worked under Jonathan Cutler from 2014-2019, moved back to Chicago to continue the Piece tradition of brewing true to style, classic beers.
